Served hot and crisp, they are hand cut with skin on, and cooked in trans fat-free, non-hydrogenated sunflower oil. Peer through to the kitchen at the back of the shop and you will see a couple of 50 kg bags of potatoes, coming from the local region, including Syria and Lebanon.
