With all the diverse culinary experiences available in Abu Dhabi, the Capital is an amazing playground that keeps surprising us, especially if you are curious to discover new chefs and culinary trends.
What we personally prefer is being told a story that will surprise the tastebuds and evoke unique memories.
We were lucky to be amongst the very first guests to come experience the new dining concept at The Park Grill in Park Hyatt. It is called ‘The Bespoke Experience’ and is all about Omakase principles.
Not familiar with this concept? Omakase is a Japanese word that means “We’ll leave it to you” which means you let the Chef lead your dinner and come up with a selection of dishes he will choose and prepare for you and only you.
So, after asking us about our specific dietary requirements, our mood on the day – more into seafood, raw food or craving meat, the Chef will actually surprise you with preparing a totally bespoke 4-course menu in an interactive manner as some of the dishes are actually prepared at your table.
Don’t skip the appetizer at the bar
Before heading the restaurant, take a moment to stop at the bar as they have revamped their cocktail menu with iconic cocktails from around the world. Cozy and intimate, it is the perfect way to just relax. Once ready, you will head downstairs to the table and embark on this journey.
So, to start off our culinary dinner, a trolley full of different ingredients was brought to our table and a version of the Caesar salad was put together for us. We were first served a flavorful broth in a tiny glass, and then ingredients including steamed French cornfed chicken, dehydrated and crispy wagyu ham, croutons, pecorino, fresh anchovies on top of baby lettuce leaves were assembled together and topped with a homemade dressing prepared with chia seeds. A beautiful and tasty reinterpretation of the classic Caesar!
Our preferred dish was the green pea soup, as the simplicity of the dish contrasted with all the robust flavors. Served with a bowl filled with mandarin zest, a couple of drops of oil, baked ricotta, roasted pine nuts and fresh mint leaves. Patrick, the restaurant manager encouraged us to inhale the smell as they poured the green pea soup onto the bowl. It was a pure delight to all the senses.
Next, the Chef brought a brioche halibut fillet – we had seen the fresh fish at the entrance while arriving – served with Porcini that arrived the day we visited, a few clams, mash potato and a cod foam on top. We liked the autumnal colors, the various textures and the softness of the beautifully cooked fillet.
As Park Grill has built a strong reputation both as meat and seafood experts, we were not surprised that the final main course was veal ribs. Cut at the table, the ribs came accompanied with delicious old-fashioned hand cut fries prepared with French duck fat and white beans topped with a slice of grilled foie gras.
Even the dessert is surprising…
The bespoke experience doesn’t include a dessert. However, the pastry Chef comes to the table with a trolley filled with unique delicacies – ‘saucisson cake, almond, orange and chocolate cake, and even proposes to prepare Tiramisu at the table. Hard to refuse, take whatever you feel like having from the trolley, it only costs 20AED.
To conclude…
This bespoke experience is an indulgence you should allow yourself when you want to treat yourself to something very special. Priced at 460 AED per person, the team takes you on a special and unforgettable culinary journey for the night.
