One of our favorite food bloggers has shared her secret recipe for cookie. Easy to bake they are sure to be a hit!

Makes 12 cookies (or 6 cookies Sandwiches) 

What you will need : 

Chocolate Walnut Cookies
½ cup walnuts
¼ cup desiccated coconut
2 tbsp flax meal
1 cup rolled oats
1 cup medjool dates
1 tsp cinnamon
1 tbsp coconut oil (melted)
1 tbsp maple syrup
1 tsp vanilla bean paste
¼ cup raw cacao powder
 

Peanut Butter Cream
½ cup medjool dates
½ cup salted crunchy peanut butter
? cup milk of choice (almond, soy, light coconut milk)

Directions:

Chocolate Walnut Cookies
1. Preheat the oven at 100 degrees celcius.
2. Add all ingredients to a food processor and process until the mixture is sticky when pressed between the fingers.
3. Line tray with baking paper.
4. Carefully scoop 2 tbsp of cookie mixture and press into cookie cutter moulds. You should have 12 cookies.
5. Cook in the oven for approximately 15 minutes. Let cool on a cooling rack. Cookies will slightly harden, but still remain soft and chewy.
 

Peanut Butter Cream
6. Add dates to the food processor and process until it becomes a date paste.
7. Add remaining ingredients and process for a few minutes.
8. Put into the fridge to set for ½ hour.

 Assembly

9. Fill piping bag with peanut butter cream and carefully pipe onto the chocolate cookie. If not using a piping bag, just spread the peanut butter cream onto the cookie.
10. Decorate with raspberries and top with another cookie.
11. Repeat with the remaining cookies.
12. Your friends and family will be blown away by this DELICIOUS treat! YUM!
