The Dubai homegrown concept PINZA hits Abu Dhabi
Who can resist a light and crunchy pizza topped with fresh and appealing toppings such as Italian Burrata, fresh Basil leaves or sliced mushrooms and truffle? We definitely cannot and this is why we were excited to discover that the now popular Pinza – a homegrown concept based in Dubai- has finally made its way to Abu Dhabi.
These Pinzas not to be confused with Pizzas are actually quite unique as the dough is made with 80% water and only 20% flour. Mixing 4 different types of flour including rice flour to make it crunchy, soy flour to avoid using animal fats, dried sourdough to minimize the usage of yeast which is the main factor in bloating as the yeast could ferment in your stomach, high quality soft whole wheat and topped with lots of fiber to ease the digestion.
PINZA chose a great location to open their first location in Abu Dhabi, as they are based at the Umm Al Emarat Park which is convenient when visiting the park with the whole family. A couple of tables indoor and outdoor, or you can also grab your Pinza anytime to enjoy it on your own inside the park.

One unique Pinza size, around 12 different PINZAS and two salads to choose from at the moment – priced between 25 AED and 50 AED – with three that have already become popular in their menu options : the Pinzafied Margherita with Burrata, Cherry tomatoes and Basil, the Truffle Goodness with Mozzarella cheese, Portobello mushrooms topped with Parsley and Truffle and The Tandoori Chicken with Mozzarella cheese, Mexican Jalapeño, Tandoori chicken, fresh onion, topped with Cilantro and homemade chutney.
More insight behind the PINZA brand
Meeting Tamer Elkhayat, the managing director and founder of PINZA at his location in Abu Dhabi was great to get more insight about this UAE grown brand concept that launched in December 2015 and especially about the secret around the dough used for their PINZA. We were surprised to discover he was in his early thirties, and that after spending twelve years in the hospitality sector working for Four Seasons Hotels and Resorts, he decided to create his own firm and launch his first business in F&B two locations in Dubai and one in Abu Dhabi.
Being unable to find a light pizza dough in Dubai that had the same Italian-style light and authentic taste, he partnered with two of his best friends Faisal Yabroudi and Talal Kaddah. After months of research in Rome, they created their own secret dough recipe that requires a long fermentation process which helps in eliminating the yeast completely from the PINZA so you can say good bye to being bloated ever again.
Passionate about his concept, he told us how important it was to massage and spoil the dough until the dough starts making noise alerting them that it is perfect and ready.
