Move over bread because sweet potato is the latest gluten-free food trend.

Healthy, delicious and filling are the three words to describe this latest food trend that seems to be taking over our social media timelines.

We just discovered Sweet Potato Toast. Yes, you read that right, basically now there is no need to use bread-instead let the sweet potato substitute the bread and then top it up with whatever you are craving!

All you need to do is thinly slice the sweet potato and pop it into the toaster. Once it is heated, we love to spread almond butter, banana and a dash of cinnamon on it. The ideal breakfast meal or then a snack, it is absolutely yummy and gluten-free.

Sweet potato toast, round ✌?️ was a success thanks to all of your helpful tips! ? Went for more of a crostini size this time and used a small purple-skinned Japanese white sweet potato (slightly firmer/drier texture works well for this), tossed the slices with coconut oil + salt and baked then broiled on a sheet pan. I couldn't decide between savory and sweet so made a few of each: mint pesto with smoked wild salmon, spring onions + amaranth sprouts for the savory; mashed avo with sliced strawberries, date molasses, sesame salt and mint for the sweet.
