The charm of tandoor bakeries never fail to impress us
One of the charms of Abu Dhabi is that although we have some of the most exclusive restaurants here we can also find no-fuss bakeries downtown that prepare delicious food that costs just a few dirhams.
Al Fanoos bakery is one such spot we like popping into whenever we are in the city and short of time for a proper meal.
A small shop with two bakers inside, a continuous line of customers – workers, families etc- who all come and pick their bread or warm manakeesh anytime of the day. At the back, one of the bakers looks after the huge rise/mount of dough that is just impressive while the second baker is actively making the breads on demand.
For our last visit, we asked for a freshly baked flatbread and stuffed manakeesh with a croissant shape filled with cheese and zaatar.
After cutting small round pieces of dough, the baker turns each into a flat disk as a professional pizza maker and adds the extra ingredients for the stuffed naans.
The second baker wets a cushion with water, flattens and shapes the manakeesh onto it and sticks the bread onto the ‘tandoor’ wall- Urdu name for this oven. With a long stick, he increases the gas level to warm up the oven and after a short time, he gets the bread out with his pair of long sticks.
An old-fashioned process that we hope will stay live for long as nothing beats the charm of biting a warm and crispy bread directly out from the oven.
